Fresh Raspberry Peach Smoothie Recipe

Peach season is here! I love stone fruit, especially peaches. Fresh, ripe peaches are great in smoothies. They’re delicious combined with another fruit like sweet and tart raspberries.

Here’s a recipe for a dairy-free smoothie made with a fresh summer peach, raspberries, coconut milk and a touch of vanilla. If the fruit is ripe there’s no need to add any sweetener.

Fresh Raspberry Peach Smoothie Recipe
2 tablespoons canned coconut milk
1/4 cup cold water
1 medium fresh peach, pitted and sliced
1/2 cup fresh raspberrries
Few drops pure vanilla
1/2 cup ice

Add coconut milk, water, peach, raspberries and vanilla to blender container. Cover and blend until smooth. Add ice; cover and blend until smooth. Taste for sweetness. If desired, add natural sweetener to taste.

Makes 1 serving (about 1 1/2 cups total)

Note: I use a heavy duty Vitamix blender, which results in a silky smooth drink. If you have a wimpy regular blender, you may want to peel the peach.

Tip: Coconut milk adds richness and creaminess to dairy-free smoothies. Leftover coconut milk should be stored in the refrigerator. Transfer the coconut milk to a glass jar with a tight fitting lid.

Blueberry Coconut Milk Smoothies

Life’s been a bit crazy lately. Work is beyond busy, I’m getting over a nasty cold/flu and my running routine has come to a screeching halt. Time to take a breath, reset and start again! This week, I’m taking some simple steps to stock my kitchen and get cooking again.

First, I turned on the oven and made this simple granola recipe. Then I filled the fridge and freezer with fruits and veggies to make fresh salads, soups, juices and smoothies. It’s a good feeling to have what I need to make a nourishing meal.

Here’s a recipe for the smoothie I’ve been making the past few days. It’s a dairy-free smoothie made with coconut milk, fresh banana, frozen blueberries and almonds.

Blueberry Coconut Milk Smoothies
1/4 cup canned coconut milk
1/2 cup water
1 medium banana, sliced
1 cup frozen blueberries
1 tablespoon raw almonds

Add coconut milk, water, banana, blueberries and almonds to blender container. Cover and blend until smooth. Pour into 2 glasses.

Makes 2 servings (about 2 cups total)

Spinach and Avocado Green Smoothies

Avocados are one of my favorite foods. They’re rich and creamy with a delicate flavor that pairs well with so many ingredients. Most people think of guacamole when looking for an avocado recipe. (For good reason…yum!) But avocados are great in other recipes like creamy salad dressings and smoothies.

Here’s a recipe for green smoothies with spinach and avocado. The spinach adds a fresh flavor and the avocado gives the smoothie a thick and creamy consistency. Sweeten as desired with your favorite natural sweetener.

Spinach and Avocado Green Smoothies
1 1/4 cups cold water
1 cup fresh or frozen mango chunks
1 cup fresh baby spinach
1/2 medium ripe Hass avocado, peeled and pit removed
1/2 cup ice cubes
Natural sweetener to taste

Add water, mango chunks, spinach and avocado to blender container. Cover and blend until smooth. Add ice; cover and blend until smooth. Taste for sweetness. Add natural sweetener according to your taste; cover and blend to combine.

Makes 2 servings (2 3/4 cups total)

Berry Tea Smoothies

Tea does double duty in these slushy berry smoothies. To make berry tea smoothies, start with brewed green or white tea and blend it up with fresh or frozen berries.

Then, blend in more tea flavor by adding hibiscus tea ice cubes. It’s a great trick to freeze brewed tea (or even coconut water) in ice cube trays for making smoothies. Simply freeze brewed hibiscus tea in standard ice cube trays to make the tea ice. Using the frozen tea in place of regular ice is a great way to ice up a smoothie without watering it down.

Berry Tea Smoothies
1 cup brewed green or white tea, chilled
1 cup fresh or frozen strawberries
1 cup fresh or frozen blueberries
8 hibiscus tea ice cubes
Natural sweetener, if needed

Add green or white tea, strawberries and blueberries to blender container. Cover and blend until smooth. Add ice cubes; cover and blend until slushy. Sweeten to taste. Pour into glasses.

Makes 2 to 3 servings (about 3 1/4 cups)

Tip: If you opt to use frozen fruit you’ll need a powerful blender. (I use a VitaMix.) If you don’t have a powerful blender, you may want to thaw the fruit a bit or add some additional brewed green tea for easier blending.
