Healthy Pumpkin Recipes plus Roasted Pumpkin Seeds and Fresh Pumpkin Puree

I don’t know what my Halloween costume will be yet, but I do know what I’ll be cooking with this weekend- pumpkin. It’s the biggest pumpkin weekend of the year!

Pumpkin is a favorite ingredient of mine. I use it to bake muffins and breads and to make smoothies and comforting soups. Really, I seem to put it in almost everything. I know my readers love pumpkin too, so I thought I’d post all my pumpkin recipes in one place to make them easier to find…and enjoy.

This time of year there’s plenty of fresh pumpkins around, so making fresh pumpkin puree is a no brainer. And, it would be a shame to waste those delicious seeds. Here’s two short video recipes showing how to cook fresh pumpkin and how to bake pumpkin seeds.

Easy Roasted Pumpkin Seeds Video

Save your fresh pumpkin and winter squash seeds! Roasted pumpkin seeds are simple to make and have a satisfying crunch. See how to make an easy pumpkin seeds recipe. Perfect for Halloween treats or a healthy snack. Simply toss fresh pumpkin seeds with oil and salt and bake until toasted. Season with your favorite spice blend like chili powder, garam masala or cinnamon. (My favorite is garam masala.) This simple method for roasting pumpkin seeds can also be used to roast seeds from butternut and acorn squash.

This is the first video created for my blog. It was a fun experiment and I have lots to learn! (This is what happens when you have a friend with a video camera and a little too much time on their hands.) Whole Wheat Pumpkin Bread

The pumpkin shortage is over! Celebrate by making this easy pumpkin bread recipe. It’s a healthy pumpkin bread made with whole wheat flour, pure pumpkin and low-fat yogurt. Spiced with cinnamon, ginger and cloves- this pumpkin nut loaf is sure to be a favorite.

Whole Wheat Pumpkin Bread
1 1/2 cups whole wheat flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon table salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 egg, beaten
3/4 cup packed dark brown sugar or sucanat
3/4 cup low-fat plain yogurt
3/4 cup canned pure pumpkin
3 tablespoon canola or safflower oil
1 1/2 teaspoons pure vanilla
1/2 cup chopped toasted walnuts or pecans

Preheat oven to 350 degrees. Spray bottom of 8×4-inch loaf pan with cooking spray.

In large bowl, mix flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Set aside.

In medium bowl mix egg, sugar, yogurt, pumpkin, oil and vanilla until well blended. Add to flour mixture, stirring until just combined. Stir in walnuts. Pour batter into pan.

Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack.

Makes 1 loaf (16 slices)

Tip: You can use cooked fresh pumpkin puree in place of the canned pumpkin. Be sure to use a sugar (pie) pumpkin.
